La Chapis started as a promise — that the food you grow up loving shouldn't need a white tablecloth to be taken seriously. Every taco we serve carries the same care and specificity as a grandmother's kitchen, just with wheels underneath it.
We source locally whenever we can, prep everything from scratch each morning, and refuse to cut corners on flavor. The marinades rest overnight. The salsas are made daily. The tortillas are hand-pressed right here on the truck.
Columbus has welcomed us with open arms, and we show up every day ready to earn that trust — one order at a time.
